The beginning of sweet corn season is a pretty big deal in Virginia and we’re here for it in a big way. We’re going all in on this special ice cream.
We’ve taken Adam’s Acres fresh picked sweet corn, grilled it over red oak and made that our backdrop.
Then took Autumn Olive’s bloody butcher dent corn, nixtamalized it and ground fresh masa to fashion a tender cast iron bread lying somewhere between a cornbread a tamale and mochi. Finished with ribbons of vibrant aji amarillo hot honey, the flavor moves from sweet to smoky to gently spicy in a single spoonful. This is one of the most ambitious flavors we’ve ever created, every component made by hand, every step intentional, always.
